Buttermilk Lemon Scones

  • 2 cups all purpose flour
  • 1/2 cup brown sugar
  • 1 TBSP baking powder
  • 1/2 teaspoon coarse salt
  • 6 TBSP butter
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup Bright Cow Buttermilk
  • 2 TBSP lemon zest
  • 2 TBSP buttermilk (for brushing tops)
  • 1 teaspoon granulated sugar
  1. In a bowl combine flour, brown sugar, baking powder and salt. Add zest if using.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Make a well in the center and beat eggs with vanilla and Bright Cow Buttermilk.
  4. Stir wet ingredients into dry ingredients.
  5. Pat out dough to about 1 inch thick on a lightly floured surface and cut into 8 pieces.
  6. Place scones on a baking sheet and brush with Bright Cow Buttermilk and sprinkle with granulated sugar.
  7. Bake in a preheated 375(°F) oven for 18-20 minutes.
